So, I stopped posting my weekly menus. Not because I wasn't doing them, I just thought it was not necessary anymore. Well, after three weeks of not posting them, suddenly I was not pressured to do them. So, the last two weeks were stressful for me around meal time as I was not prepared.
I am starting over. I cannot say that I created AND posted six back-to-back weeks of meals. Cannot check it off the list yet!
This week I was inspired by a few of my friends who posted their menus early. I completely stole Tuesdays meal from my friend Heidi and was inspired on a few others by my friend Kim! Thanks ladies :)
Here we go!
Monday - Chicken Quesadillas, Avocado Salad, Mexican Rice (from scratch, not a box!)
Tuesday - Artichoke and Parmesan Risotto, Spinach Salad, Bread
Wednesday - Chicken and Sausage Gumbo over rice, Carrot Salad, and Strawberry Shortcake for dessert (using up strawberries from summer before the new season!)
Thursday - Beet salad, leftover carrot salad, Tangy Roast Pork, Rosemary roasted potatoes, snap peas
Friday - Pizza and a movie night, only we are making our own pizzas this time!
Saturday - Brinner (breakfast for dinner) or leftovers if there are any, as I usually eat them for lunch
Sunday - Butternut Squash ravioli in a maple cream sauce, salad and bread
Yum! I'm excited! Now I just need to grocery shop.
On another note:
I was searching through my blog archive to make sure I had the date right for when I left my job and I came across this post about Cameron. It's a cute read and it made me smile. Maybe it will make you smile too :)
I used to plan my meals out as well, but two things happened...One, my brother-in-law saw it posted on the fridge, and teased me about how lame I was...Then, I noticed we didn't have time on certain nights to make things, something would come up, and suddenly it would be to late to roast a chicken. Love that you are able to do this....and it does save on last minute trips to the grocery store, and you know its healthful and balanced throughout the week. I now do a very loose plan. I plan out and shop for 8 meals or so, and have the ingredients on hand, but each day I assess what's going on, and decide that day....and I always keep a few boxes of Annies on hand and also spaghetti sauce in case things get really crazy. PS--would love to swap risotto recipes with you :)
ReplyDeleteI was rummaging through my freezer last week and came across a ziplock of strawberries... from last year of course. I thought, "Better eat these up." And so we have been having a lot of smoothies the past few days.
