So, I have finished my first full week of my pantry challenge. I have posted a before and after photo for you. I'm not sure if I can tell a difference, can you?
Monday
Lunch - Damien ate the last can of Spaghetti O's which we will never buy again.
Dinner - Spinach and Feta Quiche - used a can of mushrooms and a pie dough mix from my pantry. The only item we had to buy was shredded cheddar cheese.

Thank you to Kim for taking my Minute brown rice to use for her dinner. We discussed it, and we did not break any rules. I did not throw it away and it was actually eaten by someone :)
Tuesday
Lunch - Grilled Cheese Sandwiches and carrots. Nothing used from the pantry :(
Snack - Popcorn, no butter no salt. Used 1/2 cup of popcorn kernels from the pantry.
Dinner - Leftover Quiche (hey, we need to be frugal)
Wednesday
Lunch - Tuna Sandwiches for four. Used two cans of tuna from the pantry. Yes!
Dinner - Vegetable stuffed portobello mushrooms. Used a can of artichokes, frozen spinach, can of diced tomatoes and a bunch of other stuff. We had pasta on the side, so I emptied a half-full box of organic whole wheat penne.
Thursday
Lunch - Hard boiled eggs, yogurt and carrots (nothing from the pantry :()
Dinner - Tomato tortellini soup. Used two cans of tomato soup, dried oregano, dried cilantro and dried basil and 4 oz of fresh tortellini. It was delicious! Damien said he liked it too!
Friday
Spending the night at my parents house, so I won't be able to use anything from the pantry. But, overall, I think I'm doing a great job. Here's an updated photo.
Oh, and I added a rule (I know, I shouldn't change the game as I go). I won't use anything that is not vegetarian, so I donated chicken noodle soup and cream of chicken soup to the soup kitchen.

Sounds like your pantry challenge is going well. I'm impressed! I wish I actually enjoyed cooking - all the things you've made sound really good. :)
